Eyrún previously worked for the Housing and Construction Authority (isl. Húsnæðis og mannvirkjastofnun), where she worked as a quality specialist and data protection officer. Previously, she worked for Arctic Fish as a project manager in business development and as a freelance lawyer. Eyrún has a master's degree in law from the University of Reykjavík and a degree in equal pay systems from the University of Iceland.

GeoSalmo is planning to establish a land-based salmon farm near Þorlákshöfn, with a production capacity of at least 33,000 tonnes. The company aims to become a market leader in land-based salmon farming in Iceland, with a strong emphasis on delivering positive environmental and social impacts. GeoSalmo has made significant progress in its preparations by securing land, energy, and other critical assets, enabling it to commence construction on its site.

GeoSalmo áformar að reisa a.m.k. 33.000 tonna laxeldisstöð á landi við Þorlákshöfn. Fyrirtækið stefnir að því að verða leiðandi í landeldi á Íslandi með áherslu á að starfsemi þess sé í sátt við umhverfi og samfélag. Fyrirtækið hefur tryggt sér land, lokið umhverfismati, tryggt sér langtíma orkusamning við Orku Náttúrunnar (ON Power) og lokið öðrum undirbúningi sem gert hefur því kleift að hefja framkvæmdir.
